This recipe was borne out of some of our favorite ingredients that we blended together to bake as cookies, but when we rolled them into little balls, we couldn’t resist just eating them raw.
The first time we made these we saved a few and put some of them in the freezer overnight and had them the next day, chopped up, and added into some soy milk, like cereal or granola. It was delicious! Either way you have them, super fresh after you make them or out of the freezer, you will love them!

Ready in 10 minutes, Serves 8 people
Ingredients
- 2 cups GF rolled oats
- 1 cup unsweetened shredded coconut
- 1/2 teaspoon cinnamon
- 4 tablespoons unsalted, unsweetened peanut butter
- 15 medjool dates
Preparation
- In a blender or food processor, add rolled oats, shredded coconut, cinnamon and pulse a few times to break down dry mixture into coarse flour.
- Add peanut butter and medjool dates (if dates are a little hard, soak in boiling water for 5 minutes and drain before adding to mixture).
- Blend until a sticky dough forms.
- Roll into balls and store in the fridge or freezer.
Tips
Store energy balls in separate zip logs so you have them ready to grab for on-the-go.
Substitute peanut butter for any other nut butter.
