These may sound crazy, but just trust us on this one! Made with only 7 ingredients, these high fiber, gluten free and vegan cookies have become one of our favorite healthy treats during the week. These are super easy to make and you won’t be able to taste the chickpeas at all – they actually provide a light and airy texture that we think you’ll really enjoy!
1 1/2 cups chickpeas (1 can drained and rinsed)
1/2 cup almond butter (any nut butter is amazing!)
1/3 cup maple syrup
2 tsp vanilla extract
1/2 tsp baking soda
Pinch of salt
1/2 cup carob chips (you can use regular vegan chocolate chips)
Blend all ingredients together until you have a cookie dough consistency. Form balls and lay on a baking sheet.
Bake for 20-25 minutes on 350F. Let cool down for 10 minutes.
