This is not your standard granola bar. We grew up eating granola bars, but stopped when we saw all of the added ingredients that seemed unnecessary and made what we thought was a healthy snack not so healthy. This is our upgraded version, packed with nutrients, only whole plant based ingredients, and it’s delicious! We always pack a few of these for road trips, hikes, or even dessert!
Ingredients:
16 medjool dates, pitted
2 cups oats
1 cup pumpkin seeds
1 1/2 cups sunflower seeds
1/2 cup raisins
1/2 cup hazelnuts
1/3 cup sesame seeds
4 tbsp chia seeds
3 tbsp coconut oil
1 tbsp ground cinnamon
1 tsp vanilla extract
150 + 250ml water
Method:
1. Preheat oven to 375F and line baking tray with baking sheet (we used a silicone baking mat)
2. In a bowl mix together chia seeds and 150ml water and let soak for 10 minutes
3. In a blender, add the dates, coconut oil, and the remaining 250ml water and blend until a smooth paste forms, for about 1 minute.
4. In a large bowl add the rest of your ingredients, including chia seds and mix together
5. Add date paste and stir together until it’s well combined
6. Pour the mixture onto your lined baking tray and with a spatula evenly distribute the mixture across the entire tray
7. Bake in the oven for 30 minutes until edges have browned
8. Leave to cool for 15-20 minutes before cutting into bars
9. Store in the freezer or fridge
