We’ve been making this salad for over a year now and we are still obsessed. Massaging the kale may sound like a strange way to prepare your salad, but it really works to break down the kale so that it’s soft and more easy to digest. We’ve kept this recipe pretty simple by adding quinoa, beans, and sweet potatoes on top, but you can get pretty creative with this salad and add on anything that inspires you!
Ingredients:
4 cups chopped kale
2 shredded carrots
1 cup finely chopped purple cabbage
1 cup cooked quinoa
2 tbsp olive
Juice of 1 lemon
Salt & Pepper to taste
For toppings: roasted/steamed veggies of choice (we chose steamed sweet potatoes and pinto beans)
Method:
Mix the kale, carrot, cabbage, olive, lemon juice, salt and pepper in a large mixing bowl and massage with your hands until the kale has noticeably softened. Then add quinoa and mix thoroughly. Serve in a bowl and top with your favorite roasted/steamed veggies. Enjoy!
