We absolutely love these brownies! The black beans give these brownies extra fiber and protein, but they also help in keeping the brownies gooey and moist and that’s exactly what we love most about them! And we promise, you won’t even taste the beans!
- 3 cups black beans (cooked, rinsed, and drained) = about 2 cans
- 1 cup unsweetened peanut butter
- 1 tbsp vanilla extract
- 1 tsp baking soda
- ⅔ cup maple syrup, pinch of salt
- 3-4 tbsp cacao powder
- 1 cup chocolate chips (optional)
Add all ingredients except the chocolate chips into a blender/food processor and blend to combine. Once the batter is smooth add the chocolate chips and pulse a few more times. Bake in preheated oven at 350F for 30 minutes, let cool for 10-15 minutes, stores well in freezer!
