These pickled purple onions are the perfect topping for your next salad, sandwich, or grain bowl. We love making a big batch of these so we can easily add these to any meal that we make. Pickling the onions keep them crunchy and brings out their natural sweetness that we think you’ll love!


1 red onion thinly sliced
1/2 cup apple cider vinegar or white vinegar
1 cup warm water
1 tsp salt
1 tbsp maple syrup


1. Slice onion and stuff into a 16 ounce jar.
2. mix together the remaining ingredients and pour into jar until onion slices are fully covered.
3. Seal jar and shake well, store in fridge for at least one hour before eating.
4. Stores well in fridge for about 3 weeks!
