This is our go-to weeknight meal if we don’t feel like spending too much time in the kitchen. The addition of beans on top of pasta makes this rich in fiber and rather than a thick tomato sauce, we’ve kept this very light by adding a simple vinaigrette and freshly chopped cilantro.
Ingredients:
Pasta of your choice (we like using a brown rice/quinoa blend pasta from Trader Joe’s)
Cilantro (chopped)
Kidney beans (drained and rinsed)
Red bell pepper (chopped)
Garlic (finely minced)
Salt & Pepper to taste
Dressing of your choice (we make an olive oil/apple cider vinegar/dijon mustard blend)

Method:
1. Cook the pasta
2. While the pasta is cooking, heat up a 1/4 cup of water in a frying pan and add the garlic and kidney beans. Cook until the water has evaporated.
3. Assemble your pasta bowl, by adding all ingredients to a bowl, drizzle on your dressing and salt & pepper to taste. Mix it all together and you’re ready to eat! Enjoy!
